ONE-SLICE-MORE ALMOND CAKE
In honor of the publication of Tolerable in which Mr. Darcy is the CEO of an almond empire, I’m sharing the recipe for this easy almond cake. After baking the cake for photos, I left the room for a moment. When I returned, I found my husband with a guilty look on his face. “I ate three slices,” he said sheepishly. This from the man who says he doesn’t like cake. I was not mad. It felt like the ultimate compliment. This cake is so simple and so delicious.
One-Slice-More Almond Cake
1 stick butter (1/2 cup)
1 cup sugar
1 cup flour
2 eggs
1 teaspoon almond extract
Combine butter and sugar. Add eggs, almond extract and mix Add flour combine well. (I use the paddle mixer with my kitchen aid)
Put in greased pie dish. Sprinkle with slivered (or sliced) almonds and pearl sugar (or granulated if that’s all you have. Bake at 335° until done and golden at edges (about 30 minutes).
